”THE WINE During the grape growing season, Eastern Washington boasts warm summer days followed by cool nights, ensuring that grapes ripen fully while retaining ample natural acidity. Our 2015 Sauvignon Blanc shows fresh, inviting grapefruit, fresh-cut grass, and lime aromas. It is bright and crisp with refreshing citrus, lemongrass, and passion fruit flavors. The creamy palate is balanced by mouthwatering acidity. Pair this food-friendly wine with fresh oysters, grilled wild salmon, or grilled asparagus.THE VINTAGE AND VINEYARDS 2015 was one of the warmest and driest Washington growing seasons on record, and a drought year, which resulted in ripe, full-bodied white wines. The majority of the fruit for the 2015 Sauvignon Blanc was grown in the cooler Yakima Valley 60%, which produces Sauvignon Blanc grapes with a strong backbone of classic varietal flavor and racy acidity. The remaining fruit was sourced from warmer vineyards in Wahluke Slope 17%, Horse Heaven Hills 10%, and Columbia Valley 8%. Sauvignon Blanc thrives in hot weather, but we believe the best wines are created from a blend of grapes grown in warmer and cooler sites.THE WINEMAKING Our Sauvignon Blanc grapes were harvested at night or in the early morning, when the fruit is cool, to preserve its fresh flavors. The fruit was picked direct to press, and after pressing the juice was fermented in stainless steel between 48F and 57F to retain its fresh, crisp varietal flavor that gives this wine its allure.
