Description
Il Grigio Chianti Classico Riserva is highly regarded throughout the world: made from 100% Sangiovese grapes, it is a rounded, ruby-colored still red wine. Chianti Classico Riserva is produced in the province of Siena, approximately 300 meters above sea level, on well-exposed soils characterized by a calcareous subsoil rich in white marl mixed with reddish-brown clay and sandstone sands from the Macigno del Chianti. Chianti Classico Riserva wine is aged for at least 24 months, with a cleaner, more noble flavor. The training technique is spurred cordon, with stems 30 to 100 cm tall and branches pruned horizontally to the ground. Maturation takes place in contact with the skins for 18-20 days at high temperatures. The process then continues with malolactic fermentation in stainless steel vats and a second phase in Slavonian oak barrels. Twenty percent of the production is left to ferment in small oak barrels, which release their aromas into the wine. San Felice Il Grigio Chianti Classico Riserva has earned the DOCG designation and is one of the most prized: only 20% of the harvested grapes, the highest quality, are used to produce this wine. The DOCG production rules impose some stringent cultivation criteria: a maximum of 75 quintals of grapes can be harvested from each hectare of land, and each vine can produce a maximum of 3 kg of grapes.
