Beginning with William Hill Estates 140-acre benchland vineyard near the Silverado Trail, Winemaker Mark Williams turns to the hidden corners of southern Napa, the North Coast and the Central Coast to create a unique collection of rich, expressive wines.WINE TASTING NOTES Our William Hill Estate Central Coast Merlot is reminiscent of a bold Cabernet Sauvignon, with its rich flavors and substantial mouthfeel. Aromas of blackberry, black cherry and toasty oak set the stage for a palate of decadent black cherry, pepper and chocolate.VITICULTURE NOTES The fruit for our Merlot was selected from the warmest growing areas of San Luis Obispo and Monterey counties. The 2013 harvest along the Central Coast was much earlier than usual due to a dry winter and mild spring, which resulted in intensely concentrated aromatics and flavors in our wine.WINEMAKER NOTES The grapes for our Central Coast Merlot were destemmed and cold soaked for two days to enhance the extraction of color and flavor from the fruit. The wine was fermented two weeks at a maximum temperature of 85F. Only the freerun juice was selected for this wine, which was aged in contact with oak to impart notes of toast and pepper to the final blend. – William Hill Winery
