Description
The Mimuet Pinot Noir is produced in the Alois Lageder cellars, southwest of Lake Caldaro, in the beautiful valley of the province of Bolzano. The agricultural estate is in perfect cohesion with the territory and all the crops are completely biodynamic, with anthroposophic principles with the aim of combining the scientific reality with the spiritual dimension and making the farm an organic microcosm where man and nature coexist and enrich each other. In achieving this goal, Alois Lageder has undertaken two projects. the Grandorto project, to make various crops coexist in addition to viticulture, with the aim of having a responsible and far-sighted agriculture, and the Buoi project, which with the aim of creating an ecosystem that unites man with flora and fauna, allows oxen to graze in the open air all year round, which among other advantages increases the fertility of the vineyards.
In the full Ladin spirit and the belief that Alto Adige offers the best conditions for producing Pinot Noir, Alois Lageder Mimuet takes its name from the Ladin term “Mimuet. which means “according to my tastes.” This product is included in the “le composizioni” line, in which we can find wines of great character. Produced with the organic-dynamic method with the essential role of the winemaker who identifies himself as a mediator of the microcosm, these noble red grapes are harvested in the second half of August. The soil in which viticulture takes place is gravelly, calcareous with morainic origins and the presence of clay in the upper layers. The fermentation is spontaneous, that is, without the addition of external yeasts and is followed by malolactic fermentation which takes place partly in steel, partly in wooden barrels and partly in concrete tanks for approximately 12 months.
