Description
Beringer Knights Valley Cabernet Sauvignon is made from individually vinified vineyard lots, each carefully monitored to maintain the distinctive character of its site. Extended maceration creates generous, well-structured tannins while enhancing color, aroma, and flavor. The wine is aged for 13 months in small French Nevers oak barrels, 25 percent of which are new, and undergoes full malolactic fermentation for added texture and mouthfeel. A portion of Merlot contributes plushness and roundness, while a touch of Cabernet Franc adds length and lift to the finish. The result is a rich, expressive Cabernet with dark fruit, refined tannins, and balanced oak influence. This wine pairs well with grilled steaks, roasted lamb, braised short ribs, mushroom dishes, and aged hard cheeses.
