Winemaking Process: Made using exclusively the Free run juice from Pinotage in order to minimize colour and phenolic extraction from the skins as well as preserve the natural acidity. The juice was settled overnight prior to inoculation with cultured yeast and cold fermented to enhance the aroma and flavour profile of the wine. matured for 1 month on its gross lees in stainless steel tanks. The wine was stabilized using only bentonite and a light filtration prior to bottling
