Description
Amarone Classico is the result of a careful selection of grapes in the vineyard and a very strict management of the drying process. The grapes dedicated to the production of Amarone are the best exposed and most sparse. The setting aside of the grapes is preceded by a very careful selection in the vineyard aimed at eliminating damaged bunches and those that do not have the ideal characteristics for quality drying. The grapes are subjected to a drying period of approximately 120 days, at the end of which vinification takes place. Vinification is structured in such a way as to favour the release of all the noble components from the skins.
Amarone Classico is a wine that is closely linked to the traditional production method, using only large volume wooden containers; capable of allowing the wine to evolve over the three years of ageing without distorting the aromatic profile.
