Description
Querciole is a Petnat of rare fragrance, richness and character born out of the ancient local Emilia Romagna variety Spergola, in this case from old vines cultivated organically on rocky and loamy soils. The grapes rest in the cellar one night after manual harvest and ferment naturally the following day with a brief skin maceration; must from the same year is added at bottling, and no added SO2, for the second fermentation, which lasts about 3 months. The golden apple and baked brioche aromas of the bubbles pave the way for an exuberant palate of candied citrus, baked walnuts and pickled melon.
