Description
Antinori Castello della Sala Cervaro della Sala has a long history that began in 1985. This wine, a flagship for the Antinori winery, was first produced at that time. The family purchased the estate in 1940. Previously, in the 14th century, it had belonged to the Counts of Cervara. Hence the name Cervaro della Sala. The area is one of the most evocative. Castello della Sala is located between Umbria and Tuscany, a few kilometers from the city of
Orvieto. The rolling hills and the
ideal microclimate make this part of
Umbria highly suited to viticulture. The estate extends around the castle for 550 hectares, 160 of which are occupied by vineyards. They are located at an altitude of between 200 and 400 meters. The soil is clayey in composition. The climate is characterized by harsh winters and hot summers. Finally, the role played by
morning fogs is crucial for the proper ripening of the grapes. The grape harvest begins between the end of August and the beginning of September when, after careful evaluation, the grapes reach the right level of ripeness. The grapes are placed in crates to prevent breakage. After
soft pressing, the must is transferred to
barriques where alcoholic fermentation takes place. After malolactic fermentation, the
Chardonnay and
Grechetto batches are assembled for bottling and subsequent
aging. The bottles of Antinori Castello della Sala Cervaro della Sala then rest in the historic cellars until released for sale.
