Burgundy, France….. This wine comes from the heart of the Pouilly-Fuisse appellation, but from higher altitude vineyards which were never classified as Pouilly- Fuisse. It displays pointed calcaire soil notes in the nose, with great complex fruits on the palate, and touches of honey on the finish. It is aged in 100% stainless steel.After finishing his viticulture and oenology studies, Yannick Paquet joined his father on the family domain in the famous village of Fuisse. Yannick is painstakingly meticulous in the vineyard so that he can bring in fully ripe and spotless grapes. His rigorous standards also apply in the cellar, where he vinifies the parcels separately and uses only the best tanks in the final assembly of the cuvees. All of the plots are sustainably farmed and only indigenous yeasts are used to ferment. The result is an impressive range of classic wines that showcases the limestone rich soils of the vineyard while presenting crisp yet ripe fruits.
