vintage brut, a prestigious
cuvée from the historic Épernay house
Moet & Chandon, the spiritual heir of the winemaker monk Dom Pierre Pérignon, who is credited with refining the champagne production technique in the 17th century at the ancient Abbey of Hautvillers. This prestigious
AOC champagne is a
blend of the company’s best
grand cru grapes, selected in a single
vintage: the
Chardonnay and
Pinot Noir grape varieties, grown on the limestone soils of the Champagne-Ardenne region of France. The
vinification of this prestigious
sparkling white wine is conducted according to the
champenoise method with
double
fermentation. The
manual harvest preserves the integrity of the grapes, which are picked only at their peak and pressed by
gentle pressing, which keeps the must separate from the skins. The
maturation begins in
steel vats where the first fermentation takes place. The subsequent
blend is a pure creative expression of the
Chef de Cave, who selects the most harmonious wines to create a balanced counterpoint between the structure of the Pinot and the refinement of the Chardonnay, for a result that is unique for each production year. This is followed by a long
aging with
second fermentation induced in the
bottle. The
Dom Perignon Vintage spends at least 72 months on the lees in cellars protected from light. The carbon dioxide produced, the
prise de mousse, allows the sparkling wine to acquire the typical pressure inside the bottle. After
dégorgement, the
dosage is done according to the secret blend, which is the signature at the end of the story.
