Food pairing
A marvelous accompaniment to shellfish, fish, white meats and goat cheese. For example of turbot with spinach and feta cheese, or a Crottin de Chavignol goat cheese with toasted sesame seeds.
Tasting Notes
Elegant and feminine this wine displays a nice fruitiness: lots of white currants, crisp green apples and fresh pears. On the mouth this aromatic and floral wine is balanced by a nice mineral note. It has a very agreeable roundness and a good persistence.
Vinification
After a gentle pressing and 24 hour settling of the juice, the wine ferments in thermo-regulated stainless steel tanks at 15-18 C. This is followed by 5 months of maturation on its fine lees.
Viticulture
A Pouilly-Fume of this quality comes from old Sauvignon vines planted on the chalky-clay hills of Saint-Andelain.
