Description
Grape variety: This cuvée is made up of the six grape varieties that made up the appellation in the last century, including 1/6 of red from Buxeuil: Pinot Noir, Pinot Blanc, Pinot Meunier, Chardonnay, Petit Meslier and Arbane.
Terroir: Clay-Limestone on the Kimmeridgian of the Côte des Bar, commune of Buxeuil and Polisy.
Features
Work in the vineyard: Vines from 20 to 50 years old, pruned in the first half of March – Winter ploughing – Pruning at the end of May – Amendment: compost of cattle manure + stems of grape marc.
Harvest: Manual harvesting – Pneumatic press – Thermo-regulated vats – Cold settling at 7°C.
Vinification: Alcoholic fermentation in barrels of Burgundian origin of 2nd and 3rd Meursault Chassagne Puligny Montrachel wines. Blended with 15% Rouge de Buxeuil – corked with a staple during the second fermentation before being aged on slats for a minimum of 6 years.
