Description
Essentially declassified Château-Chalon, this is an ouillé-style Chardonnay which falls outside of the appellations requirements. François comes from Burgundian winemaking pedigree, but has chosen the Jura to make wine. The La Chaux parcel has marl soils, and the wine is aged on the fine lees in used barrels for 14 months. Pair with Bresse chicken and chanterelles.
