Inspired, Dr Bill Lumsden, Glenmorangies Director of Distilling, Whisky Creation & Whisky Stocks, went on explore this idea. He discovered a strain of wild yeast growing on our own Cadboll barley which went on to form the backbone of Glenmorangie Allta.While yeast has always been a key ingredient in single malt, its impact on flavour has long been overlooked. Dr Bill Lumsden, who has a PhD in yeast physiology, was determined to find a way to showcase its influence. The result is Glenmorangie Allta, a rich and fruity expression created with a bespoke species of wild yeast, which opens up compelling possibilities for the future of Scotch whisky production.The making of Glenmorangie AlltaHaving discovered a strain of wild yeast that had never been identified before, we reunited it in the whisky-making process with local Cadboll barley. This rich, fruity single malt was inspired as Dr Bill Lumsden walked the fields near the Distillery, gathering precious samples of grain. Discovering that the barley nurtured a species of wild yeast unidentified before then, he set out to bring the two together in the making of a creamy and aromatic whisky. Aged in bourbon barrels, including many second-fill casks to showcase the spirits fruity character, Glenmorangie Allta Scots Gaelic for wild and pronounced al-ta reveals the importance of yeast to the myriad flavours found in Scotch whisky and opens up compelling possibilities for the future.
