An excellent aperitif that is also outstanding with fish, seafood and certain white meats. A classic pairing with any type of goat cheese.

The 2024 Le Petit Silex Sancerre is medium straw-yellow in color and opens with aromas of freshly mown grass and ripe lemon. On the palate, it is bright and expressive, revealing layers of dried herbs, sun-warmed stones, and dried citrus. A brilliant companion to Sandre au Beurre Blanc—the Loire’s signature pike-perch bathed in a silky butter sauce—where the wine’s minerality and citrus lift cut through the richness of the dish with precision and elegance.
