The young Pilla brothers, with their distillery and expertise in the art of making liquors, seized this unique moment and used it to their advantage.Venice was at a turning point people were just beginning to venture out again and rediscover lifes pleasures. The act of enjoying an aperitif with friends spread throughout the city and Select Aperitivo assumed the starring role in this new cocktail scene.Almost a century has passed, but today, Select Aperitivo is still known as the true icon of the Venetian aperitif a unique bitter that is served at the iconic bars in the Lagoon and by bartenders around the world, eager to offer something unique and special.30 botanicals including rhubarb roots and juniper berries give Select its rich, complex taste.RHUBARB ROOTS Macerated individually and carefully processed with artisanal mastery, they give the product its intense bitter note.JUNIPER BERRIES Macerated and extracted, their fresh, resinous notes add a strong structure and balance to the bitter, making it perfect for mixing.PRODUCTION PROCESS We use the same original processing method as in 1920, guaranteeing the highest quality and excellence today.MACERATION The botanicals are slowly macerated in a mixture of water and alcohol.BOILING The mixture is boiled to extract the true essence of the botanicals.DISTILLATION The juniper berries are individually macerated in a pot still, using artisanal methods to extract the most aromatic part of the fruit.SENSORY ANALYSIS Select Aperitivo is characterized by a sophisticated aromatic profile and well-balanced bittersweet taste.COLOR Intense and brilliant ruby red color with orange highlights.NOSE Strong and tonic primary notes, with citrus fruit and essential oils, combined with fresh, balsamic, resinous eucalyptus and menthol notes. Secondary notes are complex and herbaceous.TASTE At first taste, Select Aperitivo is complex and intense with bitter notes from roots and barks. Spicy and tropical notes come through at mid-palate, which complement the citrus notes.
