Description
The 2020 OVIS Cabernet Sauvignon is an elegant wine with a deep ruby red color. Red fruit aromas such as cassis, cherries and ripe plums are perceived in this wine, along with spicy fragrances such as black pepper and cloves. In the mouth it is a complex wine, with a good body and structure, round, ripe tannins and excellent length. The aging in oak brings flavors of toast, chocolate and vanilla.

This wine is complex, concentrated, with aromas of dark berries, citrus, florals, and black tea on the nose. The flavors on the palate are the boysenberry, cassis, dark chocolate, bay leaf, and a juicy dry finish. Decant and drink until 2034 pair with Rib Eye Steak. — Tonya Pitts

Vintage Notes
The 2020 vintage started out dry and warm. Weeks of 100+ degree weather in early May gave the vines a jump start. The heat held strong until August with a record 116˚ day in July! We started harvest a week earlier than normal, with all white grapes in house and fermenting beautifully by Sept 20th. The temperature cooled down to 80s during the harvest lull and stretched out the hang time on our reds allowing phenolic ripeness of the skins. A welcome cloud cover came on October 10th and allowed the fruit to dehydrate and get more hang time. Tonnages ended up lighter due to low spring rains. We are seeing good color concentration and density in this vintage.
