Description
Alcohol 13%
The Cabernet Franc was picked September 22th 2023. After a night in the chiller the grapes were processed ; three days of cold maceration were followed by a 20% bleed to increase the concentration in phenolic compounds. The alcoholic fermentation lasted two weeks for a total of 3 weeks in the tank prior to pressing the pomace off. The aging took place in French oak barrels (30% new) for 12 months. Today the wine exhibits rich aromas of blackberries and cassis.
220 cases were bottled unfiltered on January 20th 2025.
