Sei Solo 2021, a distinguished red wine from the Ribera del Duero Designation of Origin, is the masterful creation of Javier Zaccagnini, former president of the Ribera del Duero Regulatory Council and co-founder of the prestigious Aalto winery. This exceptional wine, made exclusively with the Tempranillo variety, comes from old vineyard plots in La Horra, with ages ranging between 60 and 100 years, cultivated in a glass system and with very low yields (between 1.000 and 2.500 Kg/ha). .
The Sei Solo 2021 grapes were vinified in small stainless steel tanks of various sizes to allow the fermentation of each vineyard plot individually, using indigenous yeasts whenever possible. During fermentation, careful pumping over was carried out to preserve freshness and fruitiness, thus seeking to develop a delicate and refined tannic structure. After alcoholic fermentation, the wines were transferred to second-use French barrels where malolactic fermentation took place at low temperatures, thus achieving a distinctive and elegant style. The wine was then moved to large 600-liter barrels, where it matured for 17 months. Only 15% of these barrels were new, with the aim of preserving the fruit aromas and avoiding excessive dominance of the wood that could compromise the balance of the wine.
Sei Solo 2021 was bottled in May 2023 without fining and with minimal filtering, only to remove very fine particles. The wine then rested for 10 months in ideal storage conditions in the winery, allowing it to evolve and refine in the bottle before being put on sale.
