The Strohmeiers think of this as their ‘house wine’ and you’re just like, ‘In what crazy universe could a wine this stellar & intricate be a HOUSE WINE?’ and then you realize: ‘The only world I would ever want to live in.” Made from a blend of all the grape varieties they have planted, the white grapes are skin-fermented before the whole shebang is blended in old oak for eight months. Fun fact: Cat Silver (in addition to being a cool name for an early 70s glam rock band) is what the Strohmeiers call the thinly-layered silicate stones that sparkle the soil of their vineyards. So beautiful! The wine tastes like cat silver in essence, cat silver the soil & Cat Silver the band — hazy yet fruity, deeply perfumed like a ballerina’s dressing room. Honeysuckle, jasmine & earl grey, like eating dried apricots in a sunset meadow.
