These casks of Madeira, Sauternes and Port may sound familiar, but allow us to explain. 43% ABV, 86 ProofWhile we blend only 7% Port into our 12 Year Old World, Port remains the most popular in the United States of these casks. True Port is a fortified wine given the namesake of its home of Portugal, from the northern region of the Douro Valley. Port is known as an after-dinner wine, usually sweet Ruby port or dry Tawny Port.Port has a sibling from the Madeira archipelago of Portugal, also by the same name. Madeira was an accidental creation of boats carrying wine fortified with grape neutral spirit for longevity and as these ships crossed the equator, the heat of the New World and motion of the boat transformed the liquid into something new and distinct- this process gives Madeira an incredibly long life, even after it is opened.Crossing over to continental Europe, the sweet wine Sauternes comes from the Sauternais section of Bordeaux, France. While a blend of grapes, what makes Sauternes so unique is that each of the grapes involved has been taken by Noble Rot, a welcome fungus that gives the grapes a concentrated flavor.Distiller Dave Pickerell called our Old World his Mona Lisa, a fitting metaphor for this treasure of European innovation born anew.
