Grape Origin The Merlot comes from La Selva estate and from Le Badelle estate. The Cabernet Sauvignon comes from La Selva estate.Soil Type Pleistocene sedimentation with a strong fluvial clay origin at La Selva and moderately deep, silty clay soil of Pliocene origin at Le Badelle.Training System Bush-trained and guyot-trained at La Selva and cordon-trained at Le Badelle.Vine Density 7,158 vines per hectare / 2,863 vines per acre at La Selva for the younger vines and 1,667 vines per hectare / 666 vines per acre for the older vines. 5,882 vines per hectare / 2,352 vines per acre at Le Badelle.Vinification The Merlot was picked from September 19 to 26 and the Cabernet Sauvignon from October 10 to 14.Vinification 4 weeks of temperature-controlled alcoholic fermentation with maceration on the skins in stainless steel tanks. Only indigenous yeasts were used. The malolactic fermentation took place in French barriques.Ageing 18 months in French barriques.Tasting Notes Intense, deep red in colour, Desiderio 2013 reveals inviting notes of sweet cherries and raspberries, rose petals and aromatic herbs, enhanced by subtle hints of menthol, red liquirice and chocolate-dipped coffee beans. The flavour is smooth and fruit-driven, with chewy tannins and a deliciously savoury finish. The perfect wine for a steak dinner. – Avignonesi
