Description
Antoine Chevalier is the sole vinifier in the remote village of Vitry-en-Perthois in a forgotten corner of Champagne called the Coteaux Vitryats, located between the Marne and the Aube.
While Antoine his the first to estate-bottle, his grandfather planted vines in the early 1970s and was instrumental in bringing deserved attention to the area. He helped to establish the local Bassuet Cooperative, which served as an important source for large Grand Marque houses to the north
With just 2.5 hectares of organically farmed Chardonnay planted on the chalky slopes below the Mont de Fourche, Antoine is crafting a range of single-vineyard, single vintage, single variety Blanc de Blancs that manage to be both full and svelte, with intense minerality and freshness.
This blanc des blancs appears straw yellow/gold and boasts a combination of fruity and pastry aromas. It is fresh and balanced on the palate with great length.
Pairing: Caviar, Crab, Shellfish, Lobster, Butter & Butter Sauce, Fried Foods, Oysters, Smoked Salmon, Sushi
