Winemakers Notes

An elegant aged red wine produced by Bodegas Quinta Sardonia with a selection of Tempranillo, Cabernet Sauvignon, Merlot, Malbec and Syrah varieties, from their own vineyards located in Villabañez and Sardón de Duero (Valladolid), facing south, at an altitude between 760 and 830 meters. Manual harvest with selection of bunches, and then mix all the varieties before fermenting. Vatted with 5-8% whole bunches. Alcoholic fermentation with native yeasts using feet of the vat and controlled temperature. Malolactic fermentation carried out spontaneously in new barrels and single wine. Aged for 20 months in new French oak barrels (25%) and the rest in single-wine barrels. Before bottling, it usually has a slight filtration.

In Sight: It has a beautiful cherry colour, with a medium-high layer, with purple edges. Clean and bright.

On the nose: On the nose it shows powerful and delicate aromas of ripe candied black fruit, with notes of nutmeg, cloves, creamy oak and soft toasted notes on a background of thyme.

On the palate: On the palate it is complex and elegant, powerful and tasty, with good structure. It enters balanced, full-bodied, creamy with sweet and very tasty tannins, firm and powerful that augur great longevity. Retronasally, ripe fruit appears, mineral and spicy touches, with a prolonged and persistent finish that leaves

It is a wine that harmonizes perfectly with matured red meats, big game meats, roasts, Iberian and cured cheeses.

This new project is co-owned by Peter Sisseck of Pingus fame and the vineyards are cultivated using biodynamic principles. The 2004 Quinta Sardonia is a blend of 36% Tinto Fino, 30% Cabernet Sauvignon, 20% Merlot, 5% Syrah, 5% Cabernet Franc, 3% Malbec,and 1% Petit Verdot. It is purple-colored with a sexy, kinky nose of spice box, smoke, creme de cassis, blueberry pie, rhubarb, and blackberry liqueur. Already complex on the palate, the wine is ripe and layered with gobs of spicy black fruits, beautifully integrated oak, tannin, and acidity, and a 45-second finish. It can be enjoyed now but should evolve for 4-6 years and drink well through 2027. Peter Sisseck hereby has demonstrated that he does not need old vines to achieve his magic.
