Description
Tippi is a sparkling rosé wine made with the ancient method of refermentation in the bottle. The grapes used are Primitivo, a native red grape variety, grown in Lizzano.Tenuta Macchiarola is an Apulian winery, founded in 2007. Domenico Mangione, the winemaker who takes care of this wonderful reality, leaves his career as a pharmacist to devote himself totally to the world of wine, with study, commitment and dedication. The vineyards are located on typical soils of the place, characterized by the presence of red soil and calcareous clayey soils loam sandy. Here a non-invasive type of agriculture is practiced, based on the principles of organic: no chemicals, therefore, in order to preserve as much as possible the terroir and varietal characteristics of the grapes, together with those of each different vintage. No herbicides, pesticides, chemical fertilizers are used, but only organic products. In order to ensure the widest and most diverse biodiversity, the vines are surrounded by olive trees and fields, and are rich in vegetation between the various rows. The Tippi is dedicated to Domenico’s wife. The harvest, manual, is carried out earlier than the normal level of ripeness of the grapes, in order to ensure high levels of acidity, necessary to obtain a fresh and drinkable bubble. While the first fermentation is spontaneous, the second, in the bottle, necessary to produce bubbles, takes place thanks to the addition of fresh must. Before being put on sale, it does not undergo any alteration, clarification or filtration, for a lively “colfondo”. The Tippi in the glass is bright pink, slightly veiled. The scent is rich in fruity and floral notes. The sip is crisp, fresh, with pleasant savory hints of the sea. Perfect to drink as an aperitif and with a simple drink, it goes well with light appetizers, vegetables, cold cuts and fresh cheeses.
